ラテン語 gulbia（のみ・穿孔具） から。もとは木を丸くえぐる工具「丸のみ」の名で、「刃を食い込ませてえぐり取る」 動きがそのまま動詞になった。
動詞では「えぐる・くり抜く」。gouge out a hole（穴をえぐる）、gouge a groove（溝を彫る）。名詞では工具そのもの、またはえぐられてできた「溝・傷あと」を指す。
さらに比喩で「法外な金をむしり取る」という口語が定着している（price gouging＝災害時などの不当な値つり上げ）。物を深くえぐる → 金を深くむしるとつなげれば、二つの用法が一本になる。
