taste は、触れて確かめることを表す印欧祖語 *teh₂g-（触れる）と、ラテン語 taxō（評価する・非難する）につながる。舌で食べ物に触れ、その性質を試して評価することが、味わう行為の中心にある。
そこから taste は「味わう」という動詞と、「味・味覚」という名詞の両方に発展した。食べ物の味だけでなく、taste in music のように、良し悪しを判断する感覚や好みも表せる。
